The pistachio, perfected
Shape is the quickest way to tell them apart — and each has its own flavour, size range and best use.

The longest Iranian pistachio — almost twice as long as it is wide, with an ivory shell and a sweet, buttery kernel. Iran’s flagship export variety.

“Ram’s head”: broad, round and generous, with a thick kernel and a deep, toasty crunch. The backbone of salted ajil.

Long and almond-shaped with a bright shell and pale-green kernel — refined, sweet and excellent value for a long variety.

Small, round and Iran’s most widely grown variety. A classic pistachio flavour, a great kernel ratio and the best value per tonne.

Semi-dry “chocolate dates” with a crackled skin and a deep caramel chew.

The longest, most elegant Iranian pistachio — buttery, sweet and naturally open.

Big, round and generous — the “ram’s head” pistachio with a deep, toasty crunch.

Jumbo pistachios roasted with Khorasan saffron and sour lemon — a bazaar classic.

Vivid green kernels from the early harvest — the pastry chef’s pistachio.

Small, curved, oil-rich mountain almonds — the most prized almond of Iran.

Pale, sweet walnut halves from Iran’s walnut capital — no bitterness, just cream and crunch.
